Ham & Cheese Wonton Ravioli

Ham & Cheese Wonton Ravioli

Makes: 3 Ravioli


Ingredients:

  • 6 wonton wrappers
  • 1 tablespoon cream cheese
  • 1 tablespoon finely shredded ham
  • 2 teaspoons finely grated Parmesan cheese
  • 1/2 scoop (15g) pure protein powder
  • 1 garlic clove, finely diced

Method:

  • To prepare the filling place the cream cheese in a small bowl and warm in the microwave until its soft enough to stir
  • Add the ham, Parmesan, protein powder and garlic to the softened cream cheese and stir until well combined
  • Place the wonton wrappers on a clean dry surface and cut into equal sized round discs, the picture shown uses an egg ring
  • Place half of the ham and cheese mixture in a small little dome a middle of one wonton wrappers
  • Dampen fingertips and moisten the wonton wrappers where there is no filling
  • Place another one of the wonton wrappers on top tightly pressing down to tightly seal the filling and then press down the joining wrappers tightly to seal
  • Repeat with the other wonton wrappers and filling
  • Gently place the wonton Ravioli in a saucepan of simmering water for approximately 3-5 minutes or until the wonton wrappers are translucent and cooked through.
  • Picture shown has the wonton Ravioli served with Caulifredo Sauce

WHMP: 11 June 2017

I got moving again today for the first time in nearly a fortnight dragging both the boys along for the trip.


The pace was a bit slower but I really enjoy doing active things as a family as pre-sleeve this would have never happened.

Walking home from the supermarket I was carrying a 2.5kg bag of potatoes. Wow oh wow I have lost in excess of 23’bags of potatoes!!! Now that’s a scary thought and a shit load of potatoes.

Otherwise a domestic goddess kind of day cleaning, washing and cooking.


I honestly haven’t stopped since I got out of bed at 7.30 this morning. Nothing special but I good day.

The last four bad nights have caught up with me. After only having 16 hours sleep collectively I am somewhat destroyed with energy levels I don’t all-time low.

Shopping expedition this morning I managed to wangle in excess of 60kg and to shopping trolleys on my own …… I couldn’t have done that eight months ago!


I then let the little guy run out some steam at the play cafe with some friends. Comments were “wow you look awesome and thin in jeans but you look like crap!” True friends right there hehe

Pumpkin Ricotta Wonton Ravioli

Pumpkin Ricotta Wonton Ravioli

Serves: 1


Ingredients:

  • 4 wonton wrappers
  • 1 tablespoon pumpkin purée
  • 1 teaspoon ricotta
  • 1/3 scoop (10g) pure protein powder
  • Fresh chilli to taste

Method:

  • To prepare the filling place the pumpkin, ricotta, protein powder and fresh chilli in a mixing bowl and stir until well combined
  • Place the wonton wrappers on a clean dry surface and cut into equal sized round discs, the picture shown uses an egg ring
  • Place half of the pumpkin mixture in a small little dome a middle of one wonton wrappers
  • Dampen fingertips and moisten the wonton wrappers where there is no pumpkin
  • Place another one of the wonton wrappers on top tightly pressing down to tightly seal the filling and then press down the joining wrappers tightly to seal
  • Repeat with the other two wonton wrappers and filling
  • Gently place the wonton Ravioli in a saucepan of simmering water for approximately 3-5 minutes or until the wonton wrappers are translucent and cooked through.
  • Picture shown serves with Basil Protein Pesto and crumbled feta cheese.

WHMP: 9 June 2017

The amazing advice I got to get new firmer fitting knickers has been so much more effective than I ever thought possible.  Since I have down-sized the knickers my skin irritations have been in check and much more manageable.

So off I went today to get some more after doing my first clothing clear out throwing out all my larger pairs last night.  While I was at the shop I saw they had jeans on clearance so I thought stuff it and bought some. They bloody well fit!!

Jamie is slightly amused as he has never in the entire time he has known me ever seen me in a pair of jeans, let alone skinny jeans!! Have paired it with a top that has finally gone down a size.  I think FINALLY that clothing number is starting to drop.

Chicken & Leek Sausage Rolls 

Chicken & Leek Sausage Rolls

Makes: 12 portions


Ingredients:

  • 3 mountain bread wraps
  • 2 eggs, lightly beaten
  • 1 teaspooon milk
  • 500g chicken mince
  • 1 leek, finely shredded
  • 1/2 celery stalk, finely diced 
  • 3 garlic cloves, finely diced
  • 1/2 cup breadcrumbs
  • 2 scoops (60g) pure protein powder
  • 2 teaspoons dried mixed herbs

Method:

  • Preheat oven to 180 degrees and line a tray with baking paper
  • Lightly beat the 2 eggs, set aside a small Portion (approximately 2 teaspoons) to add with the milk to use as the egg wash
  • In a mixing bowl place the mince, Leek, celery, garlic, breadcrumbs, protein powder, mixed herbs and the eggs
  • Use your hands to massage the mixture together until well combined
  • Divide the mixture into 6 equal portions
  • Slice the mountain bread in half to have 2 equal sized rectangles 
  • Using 1 half of the wrap evenly spread 1 portion of the meat down the slightly off centre down the middle of the wrap in a sausage shape
  • Fold the smaller portion over the meat
  • Brush the other side with egg wash befor folding over to complete the sausage roll
  • Place on the baking tray with the seal side down 
  • Repeat with the remaining mountain bread and meat portions 
  • Brush the tops of the sausage rolls with egg wash 
  • Bake in the pre-heated oven for 20-25 minutes
  • Allow to cool for 10 minutes on the tray before cutting into portions and eating.

Mini Protein Chocolate Crackles

Mini Chocolate Protein Crackles

Makes: 18


Ingredients:

  • 4 tablespoons coconut oil, melted
  • 2 tablespoons milk
  • 2 scoops (60g) chocolate protein powder 
  • 1 1/2 teaspoons cacao
  • 1 teaspoon maple syrup
  • 1 1/2 cups rice bubbles

Method:

  • Place 18 mini cupcake liners out on a tray
  • Place the rice bubbles in a mixing bowl 
  • Place the melted coconut oil, milk, protein powder, cacao and maple syrup in a bullet style blender and process until smooth
  • Working very quickly pour the chocolate mixture over the rice bubbles and mix until evenly wel coated 
  • Spoon a heaped teaspoon of mixture into the pre-laid out patty pans 
  • Place in the fridge to set for at least 60 minutes

WHMP: 8 June 2017

Today I wore the jewellery I was given for my birthday, being a pair of earrings and necklace with the tree of life on them.  These pieces are some much more than pretty bling.  They symbolise every part of my new found appreciation for life as a result of my sleeve, and Percy.


The tree of life symbolised:

  • Personal growth (well I am actually downsizing but my being is growing everyday)
  • Redemption
  • Protection
  • Generosity
  • Strength
  • Wisdom
  • Bounty
  • Beauty
  • Family


I think all these words totally encapsulate everything I am hoping to achieve on this journey.


Actually strike that…..

I think these words totally capture everything that I have already achieved so far and that I will continue to keep achieving.  I am so bloody proud of myself!


I have decided however that the world is playing tricks with my mind.  Both yesterday and today as I was attempting to leave work the car next to mine had parked so ridiculously close to my car that not even Twiggy herself would have been able to get into the car.

Pre-surgery Holly would have waddled off to the closest food outlet and ordered something to eat and drink while waiting for the other driver to leave so that I could get into my car.


Not anymore!! Now I get in through the passengers side and much to my delight I actually slide over the console and into the driver seat without any problems.  The universe, thanks to other selfish parkers, is reminding me to stop and appreciate the little wins but massive lifestyle rewards along the way.

I am pleasantly surprised with this weeks loss due to being unwell myself, caring for a sick child and doing very minimal exercise.

I also find it completely mind boggling that I have lost an astronomical 40kg since surgery.  I never thought I could lose that much weight at all let alone losing that much in 24 weeks!

Today reinforced to me the importance of being organised when it comes to meal times! Today my work day was split between LMH and the department so I couldn’t take my normal little lunchbox #yumbox with me.  Having to rely on foods from food courts left me bloated, crampy and Percy grumbling with severe nausea and a  caught up feeling in my throat.

Back to my routine of being prepared with my lunchbox for tomorrow!

WHMP: 6 June 2017

My normal exercise day went out the window today as Jamie and I both had the day off so we head to the movies. It’s nice that my arse now comfortably fits and I no longer fidget and squirm trying to get comfortable in the sardine can.


I spent the afternoon with the little guy then tonight I was off to the “I love the 90’s” concert which was for a lovely dear friends hens show.


As per normal Holly-style, I couldn’t go anywhere without causing a potential scene. Mid-boogie my skirt ended up around my ankles, luckily I was wearing dark opaque tights and it was the middle of the dark dance floor so I think it went un-noticed! It may be time to retire my favourite skirt!


The other #littlewin I had was the I danced for 3 hours, in heels without any resting (or alcohol) and was completely fine. No pain, not revoltingly sweating, no struggling to keep up. Just you’re average person enjoying the concert. I was a great night! And 3 hours of incidental exercise for the win!
