Parmesan Crisps

Makes: 16 Crisps


Ingedients:

  • 1 piece of mountain bread
  • 2 tablespoons egg wash
  • 2 garlic cloves
  • 1/3 cup grated Parmesan cheese

Method:

  • Preheat the oven to 180 degrees Celsius and line a tray with baking paper
  • Place the Parmesan and roughly chopped garlic cloves into a food processor and blend until a breadcrumb/meal texture
  • Cut the mountain bread into 16 equal portions
  • Dip the mountain bread piece into the egg wash until fully coated and lay on the prepared tray
  • Repeat with all the mountain bread pieces
  • Evenly sprinkle the cheese and garlic mixture over the mountain bread pieces
  • Bake for 5-8 minutes until golden and crispy
  • Allow to cool completely on a wire rack

Protein Brownies

Protein Brownies
Makes: 12


Ingredients:

  • 400g can black beans, drained and well rinsed
  • 2 scoops (60g) chocolate protein powder
  • 3 tablespoons cacao
  • 1 tablespoon coconut flour
  • 1 egg, lightly beanten
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch salt

Method:

  • Preheat the oven to 170 degrees Celsius and line a 9 inch square tin with baking paper and spraying with cooking spray
  • Place all ingredients into a food processor and blender until smooth, stopping a couple times to scrap down the sides of the bowl a couple times
  • Pour the batter into the prepared tin and even out
  • Bake for 15 minutes or until the top is set and the edges are pulling away from the sides
  • Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completed
  • Slice evenly into 12 pieces

Chocolate Chip Protein Cookies

Chocolate Chip Protein Cookies 

Makes: 10 cookies



Ingredients:

  • 1 egg
  • 1/2 cup milk
  • 3 scoops (90g) vanilla protein powder
  • 1/4 cup coconut flour
  • 1/4 cup almond meal
  • 1 tablespoon flaxmeal
  • 1 tablespoon chia seeds
  • 1 1/2 teaspoons xylitol*
  • 1/2 teaspoon baking powder
  • 1/4 cup dark chocolate chips/chunks

*xylitol can be replaced with any low calories natural or artificial sweetener of your choice

Method: 

  • Preheat the oven to 180 degrees Celsius and line a tray with baking paper
  • Place the egg and milk in a mixing bowl and whisk with a fork until well combined
  • Add all ingredients except the chocolate chips and fold through the wet mix until just combined
  • Add the chocolate chips in and fold until just mixed, try not to over mix
  • Spoon the mixture into 10 even sized dollops  allowing about 3cm between each cooking
  • Bake for 13 – 15 minutes
  • Allow to cool on the tray for 10 minutes before moving to a wire rack to cool completely.

Ingredients:

  • 2 cups rolled oats
  • 4 scoops (120g) chocolate protein powder
  • 250g pitted dates
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 tablespoons water
  • 1 teaspoon vanilla
  • Pinch salt 

Method:

  • Line a brownie tin with plastic wrap 
  • Place all ingredients in a high powered food processor and blend until the mixture comes together into a ball
  • Using damp hands firmly press the mixture into the prepared tin
  • Chill for approximately 4 hours until firm
  • Slice into even portions with a sharp knife with a hot blade.

Ingredients:

  • 3 (90g) scoops vanilla protein powder 
  • 1 1/2 cups rolled oats 
  • 1/2 cup almond meal 
  • 1/4 cup shredded coconut 
  • 1/4 cup golden syrup 
  • 1/4 cup rice malt syrup 
  • 1/4 cup coconut oil, melted 

Method: 

  • Combine all ingredients into a high powered food processor and process until well combined and starts to ball together 
  • Split the mixture into 2 even portions and in plastic wrap roll into an even log shape approximately 3cm thick 
  • Place in the freezer for 30 minutes
  • Unwrap the logs and slice in 1cm thick Discs
  • Store in a zip lock bag in the freezer.

Chocolate Meringue Protein Cookies

Chocolate Meringue Protein Cookies

Makes: 36 cookies
Ingredients:

  • ½ cup caster sugar
  • 2 scoop chocolate protein powder
  • ½ teaspoon cinnamon
  • 4 eggs whites
  • ¼ teaspoon cream of tartar

Method:

  • Preheat the oven to 120 degrees Celsius and over 2 baking sheets with alfoil
  • Combine the sugar, protein powder and cinnamon until well mixed and set aside
  • Place the egg whites in a mix master and whisk with the cream of tartar until foamy
  • Raise the speed to medium and add in a tablespoon of the dry mixture at a time
  • Continue to whip until all the dry mixture is included and until the mixture forms stiff peaks
  • Spoon the mixture into a piping bag and pipe the mixture into 3cm circles
  • Bake for 75 minutes and turn off the oven but do not open the oven door
  • Leave the trays in the oven for 60 minutes before removing from the oven and placing on a cooling rack.

  • 6 scoops chocolate protein powder
  • 1/2 cup rolled oats 
  • 1/2 cup almond meal
  • 1/2 cup dark choc chips
  • 1 cup sultanas 
  • 1/2 cup chopped dried apricots
  • 1 1/2 teaspoons baking powder
  • 1 cup natural yoghurt
  • 1/4 cup milk

Method:

  • Preheat the oven to 180 degrees Celsius and line 2 trays with baking paper
  • Place all ingredients into a mixing bowl and stir until well combined 
  • Spoon a heaped tablespoon of mixture onto the prepare baking tray allowing at least 2cm between each ugly
  • Bake for 20-25 minutes until golden and cooked through
  • Allow to cool on a rack.

Lemon Protein Meringues

Lemon Protein Meringues

Ingredients:

  • 1/2 cup eggs whites
  • 60g vanilla protein powder
  • 2 teaspoons sweetener 
  • 1/2 teaspoon cream of tartar
  • Zest & juice of large lemon

Method:

  • Preheat the oven to 120 degrees Celsius and line 2 trays with baking paper
  • Using electric heaters to beat the egg whites until you have soft peaks
  • Add in the sweetener, cream of tartar, juice and zest and beat until combined
  • Use a spatula to gently fold through the protein powder 
  • Spoon the mixture into a piping bag
  • Pipe the Meringues into 2cm rounds 
  • Bake for 45 minutes, swapping the trays over on high and low rack at the 25 minute mark
  • After the 45 minutes turn the oven off and allow the Meringues to sit in the oven for an hour
  • Transfer to a wire rack to cool completely

  • 100g dried apricots 
  • 80g dried goji berries
  • 70ml boiling water

Method:

  • Soak the dried fruit in the boiling water for 30 minutes
  • Place all ingredients into a high power food processor and process until it Balls around the blades
  • Split the mixture into two even portions 
  • Roll each portion into and roughly into an even log shape 
  • Roll the log tightly in plastic wrap and compress the log finishing with each log to be approximately 2cm round and 18cm long
  • Place the wrapped log in the freezer for an hour
  • Remove the plastic wrap and slice into 1cm Discs

  • Place the wrapped log in the freezer for an hour
  • Remove the plastic wrap and slice into 1cm Discs
