Chicken Wonton Taquitos

Makes: 6 taquitos

Ingredient:

  • 6 wonton wrappers
  • 90g diced roast chicken
  • 3 tablespoons grated cheese
  • 3 tablespoons refried beans
  • 3 tablespoons salsa

Method:

  • Preheat the oven to 180 degrees celsius and line a baking tray with baking paper
  • Lay the wonton wrappers out on a clean dry surface in a single layer
  • Spread 1/2 tablespoon of the refried beans down the middle of each wonton wrapper and then top with 15 grams of chicken, 1/2 tablespoon grated cheese and 1/2 tablespoon salsa
  • Fold one half of the wrapper tightly over the filling, dampen the edge of the unfolded filling with some water using your finger tips
  • Fold the other side tightly over to form a cylinder
  • Place on the baking paper fold side down and lightly spray with cooking spray
  • Bake for 15-20 minutes until golden brown

BBQ Pork Dumplings

BBQ Pork Dumplings
Makes: 48

Ingredients:

  • 48 wonton wrappers
  • 500g Pork mince
  • 2 scoops (60g) pure protein powder
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 2 garlic cloves, finely grated
  • 1cm fresh ginger, finely grated
  • 2 teaspoons Chinese 5 spice

Method:

  • Place all ingredients except the wonton wrappers into a bowl and mix until well combined.
  • On a clean dry service place a wonton wrapper
  • Dip your fingertip in a cup of water and dampen two edges of wonton wrapper in a L shape
  • Place a heaped teaspoon (approximately 20g) into the middle of the wrapper
  • Fold the wrapper over to form a triangle, press down one edge to seal the wonton with about 1/2-3/4cm seal
  • Use your fingertip to push in the filling and comfortably seal the other side
  • Dampen each of the points of the triangle and wrap them across each other to form a large tortellini shape
  • Repeat with all the mixture
  • To cook your dumplings:
  • Steam, place in a bamboo steamer and steam for 10 minutes
  • Deep Fry, for 2-3 minutes until golden and crispy
  • Pan Fry, place dumplings in a frying pan with a lid with about 1cm of water and replace lid.  Cook over a medium heat until the water has evaporated and steamed the dumplings. Then add in 1 tablespoon oil and give the frying pan a cook shake and pan fry for about 3-4 minutes until the bottom is golden and crispy.
  • Serve with your choice of dipping sauce.

Riceless Sushi

Riceless Sushi
Make: 6 Sushi pieces


Ingredients:

  • 1 nori sheet
  • 1 cup cauliflower rice
  • 2 teaspoons rice bran oil
  • 1 tablespoon salt reduced soy sauce
  • 2 grilled chicken Tenderloins
  • Julienne Vegetables of your choice. Picture shows; carrots, cucumber, snow peas and enoki mushrooms

Method:

  • Heat the oil in a heavy based frying pan over a medium heat and add in the cauliflower rice frying off for 2-3 minutes to slightly cook
  • Add in the soy sauce and mix thoroughly and allow to sit and cook slightly while you prepare the vegetables
  • Lay the nori sheet on a Sushi rolling mat smooth side down
  • Spread the cauli-rice mix evenly over 3/4 of the nori sheet leaving approximate 2-3cm of the nori sheet uncovered
  • Lay the Chicken Tenderloins and the julienne vegetables across the width of the nori sheet approximately 2cm from the end the cauli-rice covered end
  • Dampen the uncovered edge of the nori sheet with water to help seal the Sushi roll
  • Starting at the unopened end use the Sushi Mat using an even firm pressure to roll the Sushi log
  • Allow to sit for 5 minutes before slicing into 6 equal Sushi rounds

Spicy Sweet Potato Hummus

Spicy Sweet Potato Hummus
Makes: 12 x 50g portions

Ingredients:

  • 200g sweet potato
  • 400g can chick peas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 4 garlic cloves
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground chilli (optional)
  • 2 scoops (60g) pure protein powder

Method:

  • Preheat the oven to 180g degrees
  • Place the sweet potato whole and unpeeled directly in the rack and bake for 30-40 minutes until cooked through
  • Place the sweet potato in a zip lock bag and seal for 10 minutes, this will cause the skin to sweat and make it easier to peel off
  • Peel and roughly chop the sweet potato and place in a food processor
  • Place all ingredients into a food processor and blend under smooth.

Lemon Garlic Ginger Chicken Tenderloins

Makes: 6 Tenderloins 


Ingredients:

  • 6 Chicken Tenderloins, approximately 40g each
  • 3 garlic cloves, finely diced
  • 1 tablespoon finely grated fresh ginger
  • 1 tablespoon lemon juice
  • 1 teaspoon celery salt

Method:

  • Place the Chicken Tenderloins in a ziplock bag 
  • Add in all the remaining ingredient to the ziplock bag and mix so all the chicken tenders are well coated
  • Sit in the fridge for a minimum of 4 hours but preferably overnight
  • To cook spray a heavy based frying pan over a medium heat and pan fry for 3-4 minutes each side or until the chicken is cooked through.

Zucchini Slice

Zucchini Slice (protein Enriched and gluten free)

Makes: 24 portions


Ingredients:

  • 9 eggs
  • 1/3 cup milk
  • 200g bacon pieces
  • 2 large zucchinis, grated
  • 1 onion, diced
  • 4 garlic cloves, finely diced
  • 1/2 cup grated cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup coconut flour
  • 2 scoops (60g) pure protein powder
  • 1 1/2 teaspoons baking powder

Method:

  • Preheat oven to 180 degrees Celsius and generously spray a lasagne dish with cooking spray
  • Place the eggs and milk in a mixing bowl and whisk until well combined
  • Add in the zucchini, onion, bacon, garlic and cheeses and mix until well coated
  • Finally mix in the coconut flour, protein powder and baking powder stirring through until well combined
  • Pour the mixture into the prepared lasagne dish and bake for 40-45 minutes until golden and set in the middle, it can have a very slight wobble in the middle as it will continue cooking once removed from the oven
  • Allow to cool for 10 minutes before slicing

Curry Roasted Chickpeas

Curry Roasted Chickpeas

Makes: 4 portions 


Ingredients:

  • 400g can Chickpeas
  • 1 1/2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic powder

Method:

  • Drain and rinse the Chickpeas very well
  • Place the Chickpeas in a ziplock bag and add in all remaining ingredients
  • Seal the ziplock bag and shake very well until the Chickpeas are well coated
  • Preheat your airfryer to 200 degrees
  • Place half of the Chickpeas in the base of the airfryer basket and lightly spray with cooking spray and cook for 5 minutes on 200 degrees
  • Shake the basket and cook for another 5 minutes
  • Repeat the cooking process for the remaining Chickpeas.
  • Serve warm or room temperature.

Chicken Zucchini Balls

Ingredients:

  • 1 onion
  • 1 celery stalk
  • 1 medium zucchini
  • 4 garlic cloves
  • 2 egg yolks
  • 500g chicken mince
  • 1 cup breadcrumbs 

Method: 

  • Roughly chop the onion, celery, zucchini and garlic and place in a food processor with the egg yolks and process until you have a smooth paste
  • Add the paste into a mixing bowl with the chicken mince and breadcrumbs and using your finger tips to massage the mixture until well combined
  • Roll the mixture into 20 even sized balls, approximately heaped tablespoons mixture each 
  • Cook your preferred method until cooked through. Options include; pan fry in cooking spray (as seen in picture), oven baked, air fryed or simmer in your choice of sauce.

Chicken & Vegetable Spring Rolls

Chicken & Vegetable Spring Rolls

Make: 8 large or 32 mini spring rolls


Ingreidents:

  • 1 carrot, grated
  • 1 small zucchini, grated
  • 4 spring onions
  • 2 cups shredded wombok (Chinese cabbage)
  • 100g enoki mushrooms
  • 1 tablespoons fresh grated ginger
  • 4 garlic cloves, finely grated
  • 1 long red chilli, finely diced (optional)
  • 2 teaspoons sesame oil
  • 500g chicken mince
  • 8 spring roll wrappers, defrosted

Method:

  • Grate the zucchini and carrot squeezing out the excess juices then add to a saucepan with the sesame oil and stir until well coated
  • Add in the onion, wombok, mushrooms, ginger, garlic and chilli to the saucepan and over a medium heat until the cabbage softens, approximately 2 minutes
  • Add in the chicken mince and break up as fine as possible while browning the mince, approximately 5 minutes
  • Set aside to cool slightly so it’s easier to handle
  • To make the mini spring rolls cut a spring roll wrapper into 4 equal sizes squares
  • Lay your first spring roll wrapper in a diamond shape in front of you on a clean and dry surface area
  • To make the mini spring rolls place 1 tablespoon of the mixture about 1cm up from the point closest to you and evenly spread to approximately across 2/3 of the -width, try to limit the movement of the mixture to minimise tears in the wrappers
  • Fold the point closest to you over the filling and then fold the two side points over the filling so that the edges are either even or smaller than the filling
  • Very gently roll the partially covered filling into the final spring roll shape, ensuring you apply an even but gentle pressure so the wrapper doesn’t tear
  • To seal your spring roll use your fingers to dampen the closing tip of the wrapper with the water
  • Repeat until all the mixture is used
  • To make the large spring rolls follow the same method using 4 tablespoons of the filing mixture placing 2-3cm from the point closest to you.
  • Make your choice to deep fry, shallow fry or air fryer until golden and crispy.

Ingedients:

  • 1 piece of mountain bread
  • 2 tablespoons egg wash
  • 2 garlic cloves
  • 1/3 cup grated Parmesan cheese

Method:

  • Preheat the oven to 180 degrees Celsius and line a tray with baking paper
  • Place the Parmesan and roughly chopped garlic cloves into a food processor and blend until a breadcrumb/meal texture
  • Cut the mountain bread into 16 equal portions
  • Dip the mountain bread piece into the egg wash until fully coated and lay on the prepared tray
  • Repeat with all the mountain bread pieces
  • Evenly sprinkle the cheese and garlic mixture over the mountain bread pieces
  • Bake for 5-8 minutes until golden and crispy
  • Allow to cool completely on a wire rack
