Banana Cupcakes

Makes: 18


Cake Ingredients:

  • 4 ripe bananas 
  • 2 1/2 cups SR flour
  • 1 cup milk
  • 2 eggs, lightly beaten
  • 1/4 cup vanilla yoghurt
  • 3 tablespoons honey
  • 1 teaspoon vanilla essence
  • 1 teaspoon cinnamon 

Icing ingredients:

  • 250g unsalted butter
  • 2 teaspoons milk
  • 1 teaspoon vanilla extract
  • 3 cups icing sugar

Method:

  • Preheat oven to 180 degrees Celsius and line 18 cupcake trays with liners and lightly spray with cooking spray
  • Roughly chop the bananas and place in a mixing bowl, use a fork to mash the bananas 
  • Add in the remaining cupcake ingredients and using a wooden spoon to mix until just combined 
  • Evenly spread the batter across the prepared cupcake cases and bake for 20-25 minutes until golden and cooked through
  • Allow to cool completely before icing
  • To prepare the icing best the butter using electric beaters until pale and lightly whipped
  • Add the milk and vanilla lightly beating into the butter
  • Add in the icing sugar 1/2 cup at a time until you get to your desired consistency 
  • Pipe or spread the icing onto the cupcakes to suit your preferences.

Mini Passionfruit Cheesecakes

Mini Passionfruit Cheesecakes 

Makes: 12 mini cheesecakes 


Base ingredients:

  • 1/2 cup almond meal
  • 1 scoop vanilla protein powder
  • 1 teaspoon xylitol
  • 1/4 cup coconut oil, melted 

Cheesecake ingredients:

  • 300ml thickened cream
  • 2 teaspoon gelatine 
  • 85g passionfruit pulp
  • 125g extra light cream cheese
  • 2 teaspoons xylitol 
  • 2 scoops vanilla protein powder 

Method:

  • To prepare the base mix the dry ingredients in a small mixing bowl then make a well in the centre 
  • Add the coconut oil and use a knife to mix well
  • Evenly split the mixture across the mini cheesecake tray pressing the mixture down with your fingertips to firmly compact the base
  • Refrigerate while you prepare the filling
  • To prepare the filling use electric beaters to whip the cream and set aside
  • Dissolve the gelatine in 1 tablespoon of boiling water
  • Add the Passionfruit pulp and gelatine into a blender or food processor and process until well combined 
  • Add the cream cheese, xylitol and protein powder to the Passionfruit mix and process until smooth 
  • Use a spatula to fold the passionfruit mixture through the whipped cream
  • Once combined evenly spoon the cheesecake mixture over the bases and chill for a maximum of 4 hours but preferably overnight.

Choc Berry Cheesecakes

Choc Berry Cheesecakes 

Makes: 12 mini cheesecakes or square slice


Base Ingredients:

  • 1/2 cup almond meal
  • 1 scoop chocolate protein powder
  • 2 teaspoons unsweetened cocoa powder
  • 1 teaspoon xylitol
  • 1/4 cup coconut oil, melted

Cheesecake Ingredients:

  • 3/4 teaspoon gelatine powder
  • 125g extra light cream cheese
  • 1/3 cup strawberry puree, fresh or frozen 
  • 1 1/2 teaspoons xylitol
  • 1 scoop vanilla protein powder
  • 150ml heavy cream

Method:

  • To prepare the base combine all ingredients into a mixing bowl
  • Lightly spray the mini cheesecake tray and bases or line a 15-18cm square cake tin with plastic wrap
  • Evenly spread the mixture across the 12 wells and press down well or evenly spread across the prepared cake tin for a slice
  • Place in the fridge while you prepare the cheesecake filling
  • To prepare the filling, dissolve the gelatine powder in 1 tablespoon of boiling water
  • Place in a food processor with the strawberry puree, xylitol and cream cheese until well combined
  • Add in the protein powder and quickly blitz
  • In a small mixing bowl use the electric beaters to whip the cream until firm
  • Fold the two mixtures together with a spatula until just combined 
  • Even spread the mixture between the mini cheesecakes of evenly over the tin base
  • Allow to chill in the fridge for a minimum of 4 hours or if you can wait for best results overnight 
  • Serve topped with a light grating of dark chocolate.

Apricot Goji Protein Discs

Apricot Goji Protein Discs

Make: 36


Ingredients:

  • 100g rolled oats 
  • 6 scoops vanilla protein powder 
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 100g dried apricots 
  • 80g dried goji berries
  • 70ml boiling water

Method:

  • Soak the dried fruit in the boiling water for 30 minutes
  • Place all ingredients into a high power food processor and process until it Balls around the blades
  • Split the mixture into two even portions 
  • Roll each portion into and roughly into an even log shape 
  • Roll the log tightly in plastic wrap and compress the log finishing with each log to be approximately 2cm round and 18cm long
  • Place the wrapped log in the freezer for an hour
  • Remove the plastic wrap and slice into 1cm Discs

Parmesan Chilli Zucchini Thins

Parmesan Chilli Zucchini Thins


Ingredients:

  • 1 zucchini 
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon grated Parmesan cheese
  • 2 garlic cloves, finely chopped 
  • 1 teaspoon mixed herbs 
  • 1/2 teaspoon ground chilli powder

Method:

  • Preheat oven to 180 degrees Celsius
  • Thinly slice the zucchini into rounds using a mandolin 
  • Place the garlic cloves and Parmesan into a food processor and process until ground like a breadcrumb texture 
  • Place all ingredients into ziplock bag and seal
  • Massage the ingredients together so each zucchini thin is coated 
  • Lay the zucchini Thins onto a pizza tray in a single layer
  • Bake for 15 minutes
  • Remove from the tray to a wire cooling rack while still warm as become difficult once cheese has set

Classic Chicken Burger

Classic Chicken Burger

Makes: 8 standard burgers or 16 bariatric burgers 


Ingredients:

  • 500g chicken mince
  • 3/4 cup breadcrumbs 
  • 1 egg, lightly beaten 
  • 1/2 celery stalk, finely diced
  • 1/2 large onion, finely diced
  • 2 garlic cloves, finely diced

Method:

  • Place all ingredients in a mixing bowl and massage the mixture through your hands until well combined 
  • Shape the mixture into 8 standard burgers or 16 bariatric burgers 
  • Place in the fridge covered with plastic wrap for 30 minutes 
  • Heat a heavy based frying pan over a medium heat
  • Spray the pan with cooking spray and cook the burgers in batches so the pan isn’t over crowded
  • Cook the burger for 3-5 minutes each side until golden and cooked through

Ingredients:

  • 8 garlic cloves
  • 100g extra light cream cheese
  • 150ml light sour cream
  • 4 tablespoons natural protein powder
  • 1 tablespoons dried onion flakes
  • 2 cups baby spinach
  • 1/4 cup grated parmesan cheese

Method:

  • Roast the garlic clove in the husks in a 180 degree Celsius oven for 15 minutes
  • Allow to cool enough to handle and remove the husks
  • Place the roasted garlic cloves in a high powered food processor with all other ingredients and process until smooth
  • Allow to set in the fridge for a minimum of 30 minutes before serving

Lemon Ricotta Cheesecake Berry Parfaits

Makes: 6 small portions

Parfait

Ingredients:

  • 1 tablespoon water
  • 1 teaspoon gelatine powder
  • 2/3 cup low fat smooth ricotta
  • 1/3 cup low fat vanilla yoghurt
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon stevia or sweetener (or to your taste)
  • 125g fresh blueberries
  • 125g fresh strawberries

Method:

  • Place the water and gelatine in a small glass, place the glass in a bowl of boiling water and sit for 5 minutes to allow the gelatine to dissolve
  • Place the gelatine mix, ricotta, yoghurt, lemon juice, lemon zest and half of the stevia in a bullet style and process until smooth
  • Spread the mixture evenly between 6 small ramekins, small glass or another storage container
  • Chop the strawberries thinly and mix with the blueberries and the remaining sweetener
  • Sprinkle the berry mixture evenly over the top of each container
  • Place in the fridge to set for a minimum of 4 hours or preferably overnight.

Pumpkin, Bacon & Spinach Muffins

Ingredients:

  • 2 cups grated cheese
  • 1 cup diced bacon
  • 2 cups grated pumpkin
  • 1/2 cup finely chopped onion
  • 1/3 cup frozen spinach, defrosted
  • 4 garlic cloves, finely grated
  • 1 cup wholemeal SR flour
  • 1 cup white SR flour
  • 1/2 teaspoon salt
  • 3/4 cup vegetable or canola oil
  • 4 eggs
  • 1 cup milk

Method: 

  • Preheat your oven to 180 degrees Celsius and prepared enough muffin trays to bake between 15-18 muffins by spraying with cooking spray
  • Place the cheese, bacon, pumpkin, onion, spinach and garlic in a large mixing bowl and mix with a wooden space until well combined
  • Add in the flours and salt stirring well until all the ingredients are evenly and well coated in the flour 
  • In a small jug whisk together the oil, eggs and milk
  • Pour the wet ingredients in with the dry ingredients and stir until combined, do not over mix
  • Spoon the mixture evenly into the prepared muffin tray 
  • Bake for 25-30 minutes until golden and a cake skewer comes out clean
  • Allowed to cool in the tray for 5 minutes before transferring to a wire rack to cool completely

Pork & Vegetable Spring Rolls

Pork & Vegetable Spring Rolls

Makes: approximately 24


Ingredients:

  • 1 packet frozen spring roll wrappers, defrosted
  • 2 teaspoons sesame oil
  • 500g pork mince
  • 1 tablespoon rice bran oil
  • 4 cloves garlic, finely grated
  • 2cm fresh ginger, finely grated
  • 1 carrot, grated
  • 1 zucchini, grated with excess juices squeezed out
  • 1/4 head broccoli (including stem), grated
  • 1/8 head cauliflower (including stem), grated
  • 1/2 bunch spring onion, finely sliced
  • 4 mushrooms, grated
  • 1 cup finely shredded wombok
  • 1 cup bean sprouts 
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce 
  • 1 teaspoon corn flour 

Method:

  • Heat the sesame oil in a heavy based frying pan or wok over a medium heat
  • Brown the mince ensuring you break up into fine pieces during the cooking process
  • Pour the mince into a plate lined with paper towel so all the excess juices and fat is absorbed out if the meat 
  • Heat the rice bean oil in the same frying pan/wok
  • Add in all the vegetables except the wombok and bean sprouts and sauté until the vegetables have wilted
  • Add in the wombok, bean sprouts and the three sauces and sauté until the cabbage has wilted and the mixture comes together
  • Remove from the heat, then stir through the mince to the vegetable mix until well combined
  • If there appears to be any excess liquid in this mixture,drain it off
  • Allow to cool slightly
  • In a small mixing bowl combine the corn flour with 1 tablespoon water to create a paste and set aside
  • Lay your first spring roll wrapper in a diamond shape in front of you on a clean and dry surface area
  • Place 2 tablespoons of mixture about 2cm up from the point closest to you and evenly spread to approximately 8-10cm in length, try to limit the movement of the mixture to minimise tears in the wrappers
  • Fold the point closest to you over the filling and then fold the two side points over the filling so that the edges are either even or smaller than the filling
  • Very gently roll the partially covered filling into the final spring roll shape, ensuring you apply an even but gentle pressure so the wrapper doesn’t tear
  • To seal your spring roll use your fingers to dampen the closing tip of the wrapper with the corn flour paste 
  • Repeat until all the mixture is used
  • To cook your spring rolls either deep fry or shallow fry until your spring roll is golden and crispy.

Recipe Notes:

  • Best serve freshly cooked but can be stored in the fridge covered up to 3 days
  • Prepared but uncooked spring rolls are freezer friendly to be consumed within 3 months
