Makes: 12

Ingredients:

  • 1/2 cup sour cream
  • 6 eggs
  • 2 garlic cloves, finely grated
  • 150g bacon pieces
  • 150g button mushrooms
  • 150g cherry tomatoes
  • 150g sharp cheddar cheese

Method:

  • Preheat to 180 degrees Celsius and prepare 12 silicon muffin trays by lightly spraying with cooking spray
  • In a mixing bowl whisk together the eggs, sour cream and garlic until well combined
  • Roughly chop the mushroom and bacon to similar sized pieces, quarter the cherry tomatoes and roughly chop or crumble the cheddar cheese
  • Stir through the chopped ingredients into the egg mixture until well combined
  • Spoon the mixture evenly between the prepared muffin tray
  • Bake for 25-30 minutes until the egg has set one the outside and has a gentle wobble in the middle
  • Remove the oven and allow to sit for 10-15 minutes before removing from the silicon muffin tray before moving to a wire rack to cool completely.

Beefy BBQ Sausage Rolls

Beefy BBQ Sausage Rolls

Makes: 20 large, 40 small or 60 party size

Ingredients:

  • 5 puff pastry sheets, defrosted
  • 500g  beef mince
  • 500g sausage mince
  • 200g diced bacon
  • 3/4 cup BBQ sauce
  • 2 eggs, lightly beaten
  • 1 onion, finely diced
  • 3 garlic cloves, finely diced
  • 3/4 cup breadcrumbs

Method:

  • Preheat the oven to 180 degrees Celsius and line a tray with baking paper
  • Place all ingredients except the puff pastry in a mixing bowl and massage the mixture through your fingertips until well combined
  • Divide the mixture into 10 even portions
  • Cut the puff pastry sheets down the centre into half forming 2 rectangles
  • Using 1 half of the pastry evenly spread 1 portion of the meat down the slightly off centre down the middle of the wrap in a sausage shape
  • Fold the smaller portion over the meat
  • Fold the other side over to complete the sausage roll and use the tip of a fork to fuse the layers of pastry together the entire way along the join
  • Cut each log into your desired portion size. Half for large, 4 for small or 6 for party size then place on the baking tray with the seal side down
  • Repeat with the remaining pastry and meat portions
  • Brush the tops of the sausage rolls with egg wash
  • Bake in the pre-heated oven for 20-25 minutes
  • Allow to cool for 10 minutes on the tray before before enjoying or transferring to a wire rack to cool completely.

BBQ Pork Dumplings

BBQ Pork Dumplings
Makes: 48

Ingredients:

  • 48 wonton wrappers
  • 500g Pork mince
  • 2 scoops (60g) pure protein powder
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 2 garlic cloves, finely grated
  • 1cm fresh ginger, finely grated
  • 2 teaspoons Chinese 5 spice

Method:

  • Place all ingredients except the wonton wrappers into a bowl and mix until well combined.
  • On a clean dry service place a wonton wrapper
  • Dip your fingertip in a cup of water and dampen two edges of wonton wrapper in a L shape
  • Place a heaped teaspoon (approximately 20g) into the middle of the wrapper
  • Fold the wrapper over to form a triangle, press down one edge to seal the wonton with about 1/2-3/4cm seal
  • Use your fingertip to push in the filling and comfortably seal the other side
  • Dampen each of the points of the triangle and wrap them across each other to form a large tortellini shape
  • Repeat with all the mixture
  • To cook your dumplings:
  • Steam, place in a bamboo steamer and steam for 10 minutes
  • Deep Fry, for 2-3 minutes until golden and crispy
  • Pan Fry, place dumplings in a frying pan with a lid with about 1cm of water and replace lid.  Cook over a medium heat until the water has evaporated and steamed the dumplings. Then add in 1 tablespoon oil and give the frying pan a cook shake and pan fry for about 3-4 minutes until the bottom is golden and crispy.
  • Serve with your choice of dipping sauce.

Zucchini Slice (protein Enriched and gluten free)

Ingredients:

  • 9 eggs
  • 1/3 cup milk
  • 200g bacon pieces
  • 2 large zucchinis, grated
  • 1 onion, diced
  • 4 garlic cloves, finely diced
  • 1/2 cup grated cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup coconut flour
  • 2 scoops (60g) pure protein powder
  • 1 1/2 teaspoons baking powder

Method:

  • Preheat oven to 180 degrees Celsius and generously spray a lasagne dish with cooking spray
  • Place the eggs and milk in a mixing bowl and whisk until well combined
  • Add in the zucchini, onion, bacon, garlic and cheeses and mix until well coated
  • Finally mix in the coconut flour, protein powder and baking powder stirring through until well combined
  • Pour the mixture into the prepared lasagne dish and bake for 40-45 minutes until golden and set in the middle, it can have a very slight wobble in the middle as it will continue cooking once removed from the oven

Ingredient:

  • 3 mountain bread wraps
  • 500g pork mince
  • 150g diced bacon
  • 1 small onion, finely diced
  • 1/2 celery stalk, finely diced
  • 2 large red apples, grated
  • 4 garlic clove, finely grated
  • 2 eggs
  • 1 tablespoon fresh dill

Method:

  • Preheat oven to 180 degrees Celsius and line a tray with baking paper
  • Cut the mountain bread in half to create two even rectangles
  • Combine the remaining ingredients into a mixing bowl and use your hand to massage the mixture through your fingers under well combined
  • Divide the mixture into 6 even portions
  • Using 1 half of a wrap evenly spread 1 portion of the meat filling down the slightly off centre down the middle of the wrap in a sausage shape
  • Fold the smaller portion over the meat
  • Brush the other side with egg wash before folding over to complete the sausage roll
  • Place on the baking tray with the seal side down
  • Repeat with the remaining mountain bread and meat portions
  • Brush the tops of the sausage rolls with egg wash
  • Bake in the pre-heated oven for 20-25 minutes
  • Allow to cool for 10 minutes on the tray before cutting into portions and eating.

Ham & Cheese Wonton Ravioli

Ingredients:

  • 6 wonton wrappers
  • 1 tablespoon cream cheese
  • 1 tablespoon finely shredded ham
  • 2 teaspoons finely grated Parmesan cheese
  • 1/2 scoop (15g) pure protein powder
  • 1 garlic clove, finely diced

Method:

  • To prepare the filling place the cream cheese in a small bowl and warm in the microwave until its soft enough to stir
  • Add the ham, Parmesan, protein powder and garlic to the softened cream cheese and stir until well combined
  • Place the wonton wrappers on a clean dry surface and cut into equal sized round discs, the picture shown uses an egg ring
  • Place half of the ham and cheese mixture in a small little dome a middle of one wonton wrappers
  • Dampen fingertips and moisten the wonton wrappers where there is no filling
  • Place another one of the wonton wrappers on top tightly pressing down to tightly seal the filling and then press down the joining wrappers tightly to seal
  • Repeat with the other wonton wrappers and filling
  • Gently place the wonton Ravioli in a saucepan of simmering water for approximately 3-5 minutes or until the wonton wrappers are translucent and cooked through.
  • Picture shown has the wonton Ravioli served with Caulifredo Sauce

Cheese & Bacon Protein Discs

Cheese & Bacon Protein Discs

Makes: 12


Ingredients:

  • 250g full fat Philadelphia cream cheese
  • 150g bacon pieces
  • 1 shallot, finely diced
  • 2 garlic cloves, finely diced
  • 1/2 cup Parmesan cheese
  • 2 scoops (60g) pure protein powder
  • 1/2 cup fresh parsley, shredded

Method:

  • Place the bacon, shallots and garlic in a heavy based frying pan and sauté in cooking spray for 3-4 minutes until the shallots soften 
  • Set aside to cool slightly
  • Place the cream cheese in a microwave for 15-20 seconds or long enough for the cream cheese to be easily mixed
  • Add the protein powder, bacon mix and Parmesan cheese and mix with a fork until well combined
  • Dollop the mixture into a rough log shape in the middle of a piece of plastic wrap
  • Roll up into a log shape approximately 3-4cm round and compacting the log as you roll
  • On a second piece of plastic wrap that is played out flat spread the chopped parsley
  • Gently tip the log out of the first plastic wrap and lay the log onto the chopped parsley and roll until it’s fully coated
  • Repeat the rolling process in the second piece of plastic wrap
  • Place in the freezer for at least 60 minutes rolled before slicing
  • Remove from the freezer and using a sharp knife cut into 12 even sized discs.

Ingredients:

  • 1/2 cup egg whites
  • 1 egg
  • 1/2 cup ricotta cheese
  • 80ml skim milk
  • 1/2 cup grated Parmesan 
  • 2 garlic cloves, finely grated
  • 75g natural protein powder
  • 100g butternut pumpkin, thinly sliced
  • 100g bacon pieces 
  • 2 mushrooms, thinly sliced
  • 3/4 cup baby spinach, shredded
  • 1-2 tomatoes, halved and sliced

Method:

  • Preheat oven to 180 degrees Celicius and lightly spray a quiche tin with cooking spray 
  • In a mixing bowl whisk the egg whites for 3-5 minutes until white and foamy
  • Add in the whole egg, ricotta, milk, Parmesan and garlic and whisk until well combined
  • Add in the protein powder in 2 batches whisking in until well combined and smooth with a custard like consistency 
  • In a seperate bowl mix the pumpkin, bacon, spinach and mushroom and well mixed
  • Spread the vegetables evenly over the prepared Quiche tin, pour the egg custard over the top and give a very loose quick stir
  • Place the tomato slices gently on the top of the custard mixture 
  • Bake for 40-45 minutes until set with a gentle wobble in the middle
  • Allow to sit in the tin for 10 minutes to finish cooking, cool and set before slicing.

  • 200g packet Coles Streaky Bacon
  • 500g chicken mince
  • 1 small onion, finely diced 
  • 3 garlic cloves, finely diced 
  • 45g natural protein powder 
  • 1/4 cup breadcrumbs 
  • 1 egg

Method:

  • Preheat your oven to 180 degrees Celsius 
  • Prepare 10 silicon muffin cups by lining each muffin cup with a streaky bacon rasher forming a circle around the edges
  • Place all remaining ingredients into a mixing bowl and massage the mixture through your fingers, the mixture will be quiet sticky
  • Evenly spread the mixture between the 10 prepared muffin cups by filling the bacon ring
  • Cut the remaining 12 streaky bacon rashers into even sized pieces and place on the top of the chicken mixture
  • Bake for 25 minutes until golden and cooked through.

Pork & Vegetable Steamed Dim Sims

Pork & Vegetable Steamed Dim Sims

Makes: 54 dim sims 


Ingredients:

  • 150g sweet potato, grated
  • 50g broccoli stem, grated
  • 150g zucchini, grated
  • 120g carrot, grated
  • 120g cauliflower, grated
  • 300g wombok, finely shredded
  • 30g ginger, finely grated
  • 8 cloves garlic, finely grated
  • 1 long red chilli, finely diced
  • 500g lean pork mince
  • 2 eggs
  • 3 tablespoons natural protein powder
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons fish sauce
  • 2 teaspoons sesame oil
  • 54 wonton wrappers

Method:

  • Combine all ingredients, except wonton wrappers, in a bowl and use your finger tips to massage the mixture together until well combined
  • Pinch approximately 1 tablespoon of the mixture and place in the centre of a wonton wrapper
  • Pinch the 4 shortest edges up and then roughly bring the point over to form the small dim sim
  • Repeat until all the mixture is used
  • Place the Dim sims next to each other but not touching under a tea towel so they do not dry out while forming the remaining dim sims
  • To steam the dim sims place in a bamboo steamed basket with at least cm between each dim sim to allow the steam to easily circulate
  • Bring the water to a boil then place the steamer basket on top and steam for 8 minutes
  • Serve immediately with your preferred dipping sauce
