Crustless Quiche 

Crustless Quiche

Makes: 6 large or 10 small portions 


Ingredients:

  • 1/2 cup egg whites
  • 1 egg
  • 1/2 cup ricotta cheese
  • 80ml skim milk
  • 1/2 cup grated Parmesan 
  • 2 garlic cloves, finely grated
  • 75g natural protein powder
  • 100g butternut pumpkin, thinly sliced
  • 100g bacon pieces 
  • 2 mushrooms, thinly sliced
  • 3/4 cup baby spinach, shredded
  • 1-2 tomatoes, halved and sliced

Method:

  • Preheat oven to 180 degrees Celicius and lightly spray a quiche tin with cooking spray 
  • In a mixing bowl whisk the egg whites for 3-5 minutes until white and foamy
  • Add in the whole egg, ricotta, milk, Parmesan and garlic and whisk until well combined
  • Add in the protein powder in 2 batches whisking in until well combined and smooth with a custard like consistency 
  • In a seperate bowl mix the pumpkin, bacon, spinach and mushroom and well mixed
  • Spread the vegetables evenly over the prepared Quiche tin, pour the egg custard over the top and give a very loose quick stir
  • Place the tomato slices gently on the top of the custard mixture 
  • Bake for 40-45 minutes until set with a gentle wobble in the middle
  • Allow to sit in the tin for 10 minutes to finish cooking, cool and set before slicing.

Chickpea Veggie & Feta Mini Burgers

Chickpea Veggie & Feta Mini Burgers 

Makes:  22 by 60g mini burgers


Ingredients:

  • 400g can chickpeas, drained & rinsed
  • 1 small onion
  • 4 garlic cloves
  • 1 large carrot
  • 120g sweet potato
  • 1 cup baby spinach 
  • 180g danish feta 
  • 100g natural protein powder
  • 1/2 cup lentil flour 
  • 1 cup wholemeal breadcrumbs 

Method:

  • Roughly chop the vegetables and place in a high powered food processor, pulse a couple times 
  • Add in the remaining ingredients into the food processor and process until thick and smooth
  • Heat a frying pan over a medium heat and spray with cooking spray 
  • Spray egg rings with cooking spray and place in the frying pan
  • Spoon a heaped tablespoon (60g) of the mixture into egg ring and flatten the mixture with the back of your spoon
  • Cook for 2-4 minutes until golden, remove the egg ring the flip cooking the other side 2-4 minutes 
  • Serve with tzatziki on the side

Bacon Wrapped Chicken Cups

Bacon Wrapped Chicken Cups 

Makes: 10


Ingredients:

  • 200g packet Coles Streaky Bacon
  • 500g chicken mince
  • 1 small onion, finely diced 
  • 3 garlic cloves, finely diced 
  • 45g natural protein powder 
  • 1/4 cup breadcrumbs 
  • 1 egg

Method:

  • Preheat your oven to 180 degrees Celsius 
  • Prepare 10 silicon muffin cups by lining each muffin cup with a streaky bacon rasher forming a circle around the edges
  • Place all remaining ingredients into a mixing bowl and massage the mixture through your fingers, the mixture will be quiet sticky
  • Evenly spread the mixture between the 10 prepared muffin cups by filling the bacon ring
  • Cut the remaining 12 streaky bacon rashers into even sized pieces and place on the top of the chicken mixture
  • Bake for 25 minutes until golden and cooked through.

Chicken Pesto Balls

Chicken Pesto Balls

Ingredients:

  • 500g lean chicken mince
  • 6 portions of C4K Kitchen’s Basil Protein Pesto 
  • 2/3 cup breadcrumbs
  • 30g natural whey protein powder

Method:

  • Preheat an oven to 180 degrees Celsius and line a baking tray with baking paper or silicon mats
  • Place all ingredients in a mixing bowl and massage the mixture together using your finger tips until well combined
  • Divide the mixture into 15 even portions
  • Use damp hands to roll into balls and place on the prepared baking tray
  • Bake for 20 minutes until baked through.

Ingredients:

  • 200g butternut pumpkin, grated
  • 1 small onion, finely diced 
  • 200g cherry tomatoes, diced
  • 200g feta, diced
  • 250g rindless fat removed bacon, diced
  • 4 garlic cloves, finely diced
  • 20g fresh parsley, shredded 
  • 1/2 cup grated cheese
  • 2 teaspoons baking powder 
  • 2 cups natural protein powder
  • 3 eggs, lightly beaten 
  • 1 cup protein enriched milk

Method:

  • Preheat oven to 180 degrees Celsius and prepare 18 silicon muffin wells by spraying with cooking spray
  • Combine all ingredients until just combined
  • Spread the mixture evenly between the 18 wells
  • Bake for 30 minutes or until golden and set
  • Allow to cool in the muffin tray for 10 minutes before transferring to a wire rack to cool completely

Buffalo Chicken Balls

Buffalo Chicken BallsIngredients:

  • 500g chicken mince
  • 1/2 onion finely diced
  • 3 garlic cloves, finely diced
  • 3/4 cup breadcrumbs
  • 1 egg
  • 4 tablespoons buffalo sauce
  • 1 teaspoon red hot chilli sauce (optional)

Method:

  • Preheat an oven to 180 degrees Celsius and line a baking tray with baking paper
  • Place all ingredients into a mixing bowl and using your hand to mix well
  • Shape the mixture into 18 even sized balls (approximately 1 tablespoon of mixture each), this is easier to do with damp hands
  • Place the balls on the prepare tray and bake in the oven for 20-30 minutes until golden and baked through

Ingredients:

  • 500g turkey mince
  • 1 egg
  • 1 small onion, finely diced
  • 1/2 celery stalk, finely diced
  • 3 garlic cloves, finely diced
  • 2 teaspoons freshly ground ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon sweet chilli sauce
  • 3/4 cup breadcrumbs

Method:

  • Preheat an oven to 180 degrees Celsius and place a silicon muffin tray on a baking tray
  • Combine all ingredients in a mixing bowl and massage through your fingers until well combined
  • Evenly spread the mixture between 10 of the muffin wells
  • Bake for for 30-40 minutes until golden

Turkey Burger

Turkey Burgers 

Makes: 6 standard burgers or 12 bariatric burgers


Ingredients:

  • 500g turkey mince 
  • 2/3 cup breadcrumbs 
  • 1 egg
  • 1/2 large onion, finely diced
  • 1/2 celery stalk, finely diced
  • 2 garlic cloves, finely diced
  • 1/4 cup shredded fresh parsley 

Method:

  • Place all ingredients in a mixing bowl and massage the mixture through your hands until well combined 
  • Shape the mixture into 6 standard burgers or 12 bariatric burgers 
  • Place in the fridge covered with plastic wrap for 30 minutes 
  • Heat a heavy based frying pan over a medium heat
  • Spray the pan with cooking spray and cook the burgers in batches so the pan isn’t over crowded
  • Cook the burger for 3-5 minutes each side until golden and cooked through

Parmesan Chilli Zucchini Thins

Parmesan Chilli Zucchini Thins


Ingredients:

  • 1 zucchini 
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon grated Parmesan cheese
  • 2 garlic cloves, finely chopped 
  • 1 teaspoon mixed herbs 
  • 1/2 teaspoon ground chilli powder

Method:

  • Preheat oven to 180 degrees Celsius
  • Thinly slice the zucchini into rounds using a mandolin 
  • Place the garlic cloves and Parmesan into a food processor and process until ground like a breadcrumb texture 
  • Place all ingredients into ziplock bag and seal
  • Massage the ingredients together so each zucchini thin is coated 
  • Lay the zucchini Thins onto a pizza tray in a single layer
  • Bake for 15 minutes
  • Remove from the tray to a wire cooling rack while still warm as become difficult once cheese has set

  • Place in the fridge covered with plastic wrap for 30 minutes 
  • Heat a heavy based frying pan over a medium heat
  • Spray the pan with cooking spray and cook the burgers in batches so the pan isn’t over crowded
  • Cook the burger for 3-5 minutes each side until golden and cooked through
